We’ve cooked up a melt-in-your-mouth steak and hearty black bean stew, simmered slowly in spices and
rich stock for the ultimate slow-cooker comfort meal
Ingredients:
- 2 mixed bell peppers
- 1 red onion
- 2 cloves of garlic
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 2 tsp dried oregano
- 1 tsp ground coriander
- 1 tsp chilli flakes
- 400ml Beef Stock
- 500g of chucked steak
- 400g can chopped tomatoes
- 1 jar of black beans in their broth
Method:
1. Brown off the chuck steak in olive oil in a large frying pan.
2. Whilst the steak is browning, roughly chop the peppers, onion and garlic.
3. Transfer the steak and veg to your slow cooker, along with the black beans, beef stock, chopped
tomatoes, and spices. Give it a good stir!
4. Cook on low for around 8 hours, or cook on high for 5 hours until the meat is tender and falls apart
easily.
5. Serve with fluffy rice, tortilla chips, sour cream, a wedge of lime, and some fresh chopped coriander. Bon appétit!
