Fresh, vibrant and packed with greens, this easy soup is made entirely in the Cooks Professional Soup Blender. Simply add your favourite green veg to the jug, select the soup programme and let the blender do the rest. In just 30 minutes, you’ll have a warming, silky-smooth soup ready to serve.
Serves 4
Ingredients
250g potatoes, peeled and cut into small chunks
1 large leek, sliced roughly
250g broccoli, cut into small florets
200g frozen peas
750ml vegetable stock
2 tbsp nutritional yeast
Salt and black pepper, to taste
Method
1. For our Green Goodness Soup, we chose to add leek, potato, broccoli & peas. But the beauty of the soup maker is how easy it is to make something delicious out of whatever left over veg is hanging around in the fridge. All of the ingredients are interchangeable and a lot of different green veg works perfectly for this recipe!
2. Add your chosen veg to the blender, followed by the vegetable stock, nutritional yeast and a generous seasoning of salt and black pepper.
3. Select the Smooth Soup setting and leave the soup blender to cook and blend for approximately 30 minutes.
4. Once the soup has bubbled away and the programme has finished, check the seasoning and add a little more salt or pepper if needed.
5. Pour into bowls and serve piping hot. We topped ours with a dash of cream, some blue cheese & some super crunchy croutons!
Notes
Keep the potato pieces nice and small (around 1–2cm) to make sure they cook through fully during the 30-minute programme.
