Smashed Potatoes with Beetroot & Cannellini Bean Dip

Crispy, herby smashed potatoes served over a smooth, earthy beetroot and cannellini bean dip. A lovely vegetarian side or light lunch with fresh dill and a drizzle of olive oil to finish. 

Serves 4

Ingredients
- 1kg new potatoes
- 1 block of halloumi 
- 2 tsp dried dill
- 1 tsp dried thyme
- 1.5 tbsp flaky salt
- 3 beetroots (raw or ready cooked both work well)
- 2 tins of cannellini beans (400g each)
- 1 garlic clove
- 2 tbsp tahini
- 1 lemon, juiced
- 1 tbsp olive oil
- 0.5 tsp ground cumin
- A splash of your favourite hot sauce
- A drizzle of honey
- A pinch of salt and pepper
- Fresh dill sprigs, to serve
- A handful of pea shoots
- A drizzle of olive oil, to serve

Steps
1. To begin, preheat your oven to 220°C (200°C fan). If you're using fresh beetroot, start by wrapping the 3 beetroots loosely in foil with a healthy drizzle of olive oil and roast until tender.  Around an hour. 
2. Meanwhile, place the new potatoes in a large Stainless Steel Saucepan with salted water and bring to the boil. Cook until tender making sure to remove before they become mushy.
3. Drain the potatoes well and tip onto a large baking tray. Using the base of a glass or a fork, gently smash each potato until it splits open.
4. Scatter over the dried dill, dried thyme and flaky salt, then roast in a Mini Oven or Air fry until golden and crisp at the edges.
5. Slice the halloumi into strips and place in a bowl with a drizzle of honey and your favourite hot sauce. Toss until completely covered, then griddle on a Cast Iron Skillet until golden and slightly charred.
6. Once cool enough to handle, peel the roasted beetroots, chop roughly and add to a Food Processor.
7. Blend the beetroot along with the cannellini beans (drained and rinsed), garlic, tahinilemon juice, olive oil and cumin. Blend until smooth, seasoning with salt and pepper to taste.
8. To assemble, spread the beetroot bean dip over a serving plate, topped with the crispy smashed potatoes, hot halloumi, pea shoots, olive oil and a handful of fresh dill.
