Baked to perfection in one of our Cast Iron casseroles, it’s the perfect quick and easy brunch or lunch. Serve it up with crusty sourdough and top with crumbled feta and chilli oil.

Ingredients
- 1 red onion
- 2 bell peppers
- Handful of chopped parsley
- 2 garlic gloves
- 1tsp cumin
- 1tsp sweet smoked paprika
- 1tsp ground coriander
- 1tbsp tomato puree
- 2 tins of chopped tomatoes
- 1/2 jar of Bold Bean Co Borlotti beans
Method
1. Heat Extra Virgin Olive Oil in a cast iron pan and add your chopped red onion and peppers. Cook until softened.
2. Add the chopped garlic, parsley, spices and tomato puree. Cook for 1 minute, then add the chopped tomatoes and beans.
3. Allow to simmer for 10 minutes or until thickened.
4. Crack your eggs straight onto the top of your tomato sauce, cover and simmer gently until the eggs are cooked.
5. Serve up and enjoy!
