Ingredients
200g chapati flour
160-180ml warm water
Method
1. Place the chapati flour into a large mixing bowl. Gradually add the warm water, mixing with your hands until a soft dough forms. Add the water a little at a time, as you may not need it all.
2. Transfer the dough onto a lightly floured surface & knead for 5-8 minutes until smooth, soft & elastic. The dough should feel pliable without being overly sticky.
3. cover the dough with a clean, damp tea towel & leave to rest for approximately 20 minutes. This helps the gluten, making the chapatis easier to roll out.
4. Divide the dough into 8 even portions & roll each into a smooth ball. lightly dust your worktop with chapati flour & roll each ball into this, even circles.
5. Place a dry, cast iron pan onto a medium-high heat. Allow the pan to reach a high temperature before adding your first chapati. No need for oil or butter.
6. Cook each chapati for around 30-45 seconds until small bubbles form on the top. Flip & cook the other side until golden spots begin to form.
7. transfer to a plate & cover with a clean tea towel to keep them oft & warm while you cook the remaining dough.
8. Serve immediately alongside your favourite curries !
