Herby Pea & Cottage Cheese Protein-Packed Pancakes

Shrove Tuesday has always been about using up the cupboard staples - eggs, flour and a few fridge favourites before the start of Lent.  So this year, we’re keeping the tradition… but giving it a fresh twist.

Grab those peas from the back of the freezer and whip up these unbelievably delicious herby pea & cottage cheese pancakes.  Packed with protein and loaded with fresh herbs (we chose basil and parsley), they’re light, satisfying and full of flavour. 

We’ve taken inspo for these from one of our favourite cookbooks, Food for Life by Zoe’s Tim Spector and added edamame’s and toasted seeds for an extra protein boost.

Top with a runny egg, the most delicious creamy cottage cheese from All Things Butter and a drizzle of crispy chilli oil for a savoury stack that feels indulgent - but is perfect if you’re kickstarting healthier habits for Lent.

A little tradition.  A little reset.  A very good pancake.

We used our Food Processor to make the pancake mix, our 28cm Tri-Ply frying pan to cook them to golden brown perfection and of course our Utensil set for easy flipping!
