Sugar, Alcohol & Freezing Tips
Making homemade slushies is simple with the right ingredients, but getting that perfect icy consistency takes a little know-how. Too much sugar, too little sugar or an overly strong cocktail can all affect how your drink freezes. Our Cooks Professional Slushy Machine takes the hassle out of making frozen drinks, with dedicated settings for slushies, frappés, milkshakes and frozen cocktails. Follow our slushy machine tips to get the best results every time.
How Much Sugar Do You Need for a Slushy?
Sugar is essential for achieving the right slushy consistency. It lowers the freezing point of your drink, helping create a smooth, semi-frozen texture rather than a solid block of ice. For best results, we recommend 6–8g of sugar per 100ml of liquid, with a minimum of 5g per 100ml.
| Drink Volume | Recommended Sugar Content |
|---|---|
| 250ml | 15–20g |
| 500ml | 30–40g |
| 1 litre | 60–80g |
| 1.5 litres | 90–120g |
Check the nutritional label of your chosen drink before adding it to the machine. If the sugar content is too low, try adding a little flavoured syrup, honey, agave or simple syrup. Artificial sweeteners don't count towards the machine's regular sugar requirement.
Can You Use Fizzy Drinks in a Slushy Machine?
Yes! Fizzy drinks such as cola, lemonade and fruit-flavoured soft drinks can make delicious homemade slushies. Choose a drink with a suitable sugar content and chill it before adding it to the machine. Fizzy drinks may lose some carbonation during freezing and mixing, but they'll still deliver plenty of flavour. Avoid using diet or zero-sugar fizzy drinks on their own, as they generally lack the sugar needed for proper freezing.
Can You Make Frozen Cocktails in a Slushy Machine?
Absolutely! Our Cooks Professional Slushy Machine includes a dedicated Frozen Cocktail preset, perfect for preparing refreshing alcoholic slushies at home. However, alcohol affects freezing. The higher the alcohol content, the harder it becomes to achieve a proper slushy texture. For the Frozen Cocktail setting, your finished mixture should contain 2.8% to 16% alcohol by volume (ABV). When using stronger spirits such as vodka, rum or tequila, dilute them with suitable non-alcoholic ingredients to keep the final alcohol content within this range. For better freezing results, we recommends adding alcohol after the slushy has formed and has been served, using a measure for a single or double shot into a glass after serving.
A frozen cocktail containing too much alcohol may remain liquid. If the E4 warning appears, dilute the mixture with a suitable non-alcoholic drink and restart the programme as instructed.
Why Isn't My Slushy Freezing Properly?
If your slushy isn't reaching the right consistency, the ingredients are often the cause.
| Problem | Possible Cause | What to Do |
|---|---|---|
| Slushy is too watery | Too much sugar or alcohol | Check the recipe and dilute appropriately |
| Slushy freezes too firmly | Insufficient sugar | Add a suitable sugar-rich ingredient |
| Drink takes too long to freeze | Ingredients are too warm | Use pre-chilled liquids |
| Slushy is too thick to dispense | Freezing temperature is too low | Adjust the thickness setting |
| Machine displays E4 | Alcohol content is too high | Dilute with non-alcoholic ingredients |
| Machine displays E5 | Sugar content is too low | Add sugar or a suitable syrup |
If a slush hasn't formed after 60 minutes, follow the manual's temperature adjustment instructions, allowing 10-15 minutes between changes.
Our Top Tips for Making Perfect Slushies
- Pre-chill your ingredients: Cold liquids help the machine reach the desired consistency more efficiently.
- Check sugar levels: Aim for 6–8g of sugar per 100ml for reliable results.
- Avoid ice and solid ingredients: Never add ice cubes, frozen fruit or chunky ingredients directly to the tank.
- Strain fresh juice: Remove pulp before adding freshly squeezed juice to prevent blockages.
- Use the correct preset: Choose Slush, Frappé, Milkshake, Slush Cocktails or Frozen Drinks according to your recipe.
- Stay within the fill lines: Never operate the machine below its minimum or above its maximum capacity.
- Clean after use: Clean the dispenser and removable components according to the manual to prevent residue and blockages.
Frequently Asked Questions
Can You Make Slushies Without Sugar?
- Standard low-sugar or sugar-free drinks may not freeze correctly on their own. Our machine's manual includes specific low-sugar recipes using erythritol, lemon juice and salt. Follow these recipes rather than simply replacing sugar with artificial sweeteners.
Can You Put Fruit Juice in a Slushy Machine?
- Yes, provided the juice has a suitable sugar content. Remove pulp and solid pieces before adding it to the machine, and use the appropriate drink setting.
Why Is My Slushy Too Watery?
- Excess sugar or alcohol can prevent your drink from freezing sufficiently. Check the ingredients, follow the recommended proportions and adjust the machine's thickness setting if needed.
Can You Put Vodka in a Slushy Machine?
- Yes. Vodka can be used in suitable frozen cocktail recipes, but the finished drink must stay within the machine's recommended 2.8–16% ABV range. Never use undiluted spirits.
Do You Need to Add Ice to a Slushy Machine?
- No. The Cooks Professional Slushy Machine freezes suitable liquids internally, so there's no need to add ice. Ice cubes and other solids should not be placed in the tank.
