A crunchy and colourful, Asian-inspired slaw. Let your Cooks Professional Food Processor do the shredding while you focus on the flavours. Bright, fresh and a brilliant side for barbecues or midweek summer meals.

Ingredients
- 2 large carrots, peeled
- 1/2 red cabbage
- 1 apple, cored
- 1 fennel bulb
- 40 grams crushed peanuts
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp Willy's apple cider vinegar
- 1 lime, juiced
- 1 tsp honey
Method
1. Start by prepping your peanuts. Equip the chopping attachment to your Cooks Professional Food Processor and poor your peanuts in. Pulse until they are crushed but not ground, this is important to give the slaw a good, crunchy texture. Put these aside.
2. Next, fit the grating blade attachment and push your carrots and apple through the Processor. It’s important to do this firmly to shred into thick, matchstick-like strips.
3. To achieve the perfect dice on your cabbage and fennel, equip the slicing blade. Chop them to size, ensuring they will fit into the Processor and push firmly through the blade for a uniform cut.
4. Tip the contents of your Processor into a large mixing bowl.
5. To the slaw, add the crushed peanuts, sesame oil, soy sauce, apple cider vinegar, lime juice and honey and toss through until combined, ensuring everything is well coated and glossy.
6. Leave your finished slaw to sit in the fridge for a few minuted so the flavours can develop before giving it another toss just before serving.
7. Serve up as a perfect side to any summer dish or BBQ.
Notes
This slaw get even better as time goes on, so make in advance and save any leftovers! The vegetables will have time to soften slightly and soak up the dressing. Swap peanuts for cashews or a peanut-free alternative if needed.
